The chef uses local ingredients based on the principles of foraging. These all originate from the surrounding fields, oceans and mountains. Clearly, this is the place to be for a true taste of Cape Town.
While the foods may be homegrown, chef Janse van Rensburg combines techniques from all over the world to create his unique offerings. There are plums prepared Japanese-style with salt and vinegar, a Russian Beetroot drink, and Italian-inspired free-range chicken which is air-dried and salted.
The menu and the food appear deceptively simple, with just 20 items on the menu.
Helpful definitions of any strange-sounding terms are provided alongside. Some of these include duckweed, pangratatto, and umeboshi.
You have a choice of ordering either three, four, five, six or seven courses concocted out of the range of starters, mains and desserts available. There’s a healthy balance of seafood vegetarian and meat dishes to suit your mealtime preferences and a range of scrumptious desserts for the more daring diner.
While the quirkiness of choice in three to seven courses is a novelty in itself, it’s the exotic preparation techniques and the fine-dining presentation which make meals so memorable. A choice selection of South Africa’s finest wines, bubblies, spirits and ciders are on hand to compliment your choice of meal.
